Baked apple oatmeal
My kids love oatmeal! For breakfast every week we rotate between homemade muffins and baked oatmeal. These are both staples in our house not only because they are simple to make, but also they are easy to eat for little ones, and my kids happen to love them!
For our baked oatmeal, we usually use apples, but you can use any fruit, pears, blueberries, peaches, cherries, plums, pineapple, whatever your family enjoys. We cook the apples down for a little to soften them up, then just dump a bag of super delicious, clean muesli on top, stir it up, and bake it. Couldn’t be any simpler than that! I love using muesli because it has oats, dried fruit, nuts, seeds, all the works that I would put into my baked oatmeal anyway, so it’s just a quick trick. And best of all, there’s no added sugar or oils in the dried fruits in the brands I use and have come to love.
Baked apple oatmeal
6 large organic apples (I recommend Fuji), chopped, or about 6 cups of chopped apples
1 12 oz. bag of Seven Sundays Farmer’s Market Mix Muesli or Guud Athlete Fuel Muesli or Guud Gut Fuel Muesli

Put all the chopped apples into a large pot on the stove with about 1-2 inches of water. Cover the pot with a lid and allow the apples to cook on medium/low for at least 30-60 minutes, or until soft. Don’t worry about any extra liquid in the pot, you will need to add extra water when mixing in the muesli anyway. Preheat the oven to 350F. Once the apples are finished cooking, pour them into a large rectangle glass baking dish, pour over the bag of muesli and stir with a spatula. Add water as needed, as the oats will need lots of liquid to soak up as they cook. Stir until well-combined and flatten the top with the spatula. Bake at 350 F for about 45-60 minutes or until slightly golden around the edges. Allow the oatmeal to cool. Once cooled, cut into eight squares. Serve warm or cold.
