About me

Hi! I’m Mandy! (a.k.a Noodles) – daily-defeater of autoimmune disease and self-proclaimed foodie with a big taste for adventure.

I’ve been deemed an “energizer bunny” of sorts, as I never seem to sit still. I’m constantly on the move CrossFitting, weight training, practicing yoga, cooking, cleaning, serving others, coaching, working, but it’s my faith in Christ that keeps me grounded. And it’s my passion and love for nutrition that inspire me to share my story with others.

My story is in my food. Food has been both my passion and my healing journey from chronic illness since I was a child, and I truly believe it has the power to nourish and revive a weary body and soul. Crohn’s disease is my diagnosis, but I have never allowed that label to define me. Everyday I choose to eat foods that work well with my body, to stay active, and to be joyful. Is it always easy? Absolutely not! But thankfully, my amazing husband and my family share my passion for food, so together, we cook, eat, laugh (a lot), make memories, and just do life. It’s what makes us, us.

I gained an appreciation for all things food very early in life, as my youngest memories revolve around my dad teaching me how to make pancakes or waffles and quizzing me in the car about what ingredients go into a chicken pot pie or a Thanksgiving stuffing. My parents appropriately nicknamed me Noodles, and my endearing pet name has stuck forever.

Thanks to my family, I’ve always had a knack for good taste in food, so I hope you enjoy the special somethings I prepare in my kitchen, because Noodles Knows what’s best!
