Food is a love language in our family and always has been. My grandmother, Mom-mom we call her, and I love sharing recipes with each other. Whether it’s new recipes we read about in a magazine or an email, or even a recent discovery in a television show we recently watched, we are constantly sharing food ideas with each other. It’s so fun to still be able to connect with your 91-year-old grandmother through recipes and food memories this way. I’m so grateful.

Most recently, Mom-mom gave me a recipe idea from an article she read online. Everything bagel chicken. Couldn’t be simpler. I absolutely love everything bagel seasoning, and Mom-mom knows this full well. So when she saw this recipe, she new she had to share it with me. What a genius idea! Why had I never thought of this before?! Coat chicken breast in everything bagel seasoning, drizzle with olive oil and bake til slightly browned. Amazing. Thankfully, my kids and my husband take after me and my love for everything bagel seasoning, so I knew this recipe would be a huge hit with the whole family.

The recipe Mom-mom gave me called for a coating of only everything bagel seasoning, nothing else. I embellished mine with a little ground gluten-free cracker crumbs, just to make the everything bagel seasoning go a little further. I even made a variation once with almond flour too, and that was just as tasty. Add a little bit of salt and pepper, just for good measure, and you have a perfect coating for your chicken. I used thinly cut boneless, skinless chicken breasts and chicken enders for this recipe, which worked great. Once my chicken was all coated, I drizzled the top of each piece with a bit of olive oil and baked it at 350F for about 20 minutes. The chicken cooks quickly, so be careful not to overcook the meat, or it can become dry and a bit chewy.

Everything bagel chicken

2 lbs. thin-cut boneless, skinless chicken breasts or chicken tenders
1/2-3/4 cup ground gluten-free cracker crumbs or almond flour
1/4 cup everything bagel seasoning
salt and black pepper to taste
olive oil for drizzling

Mix together the cracker crumbs or almond flour and the everything bagel seasoning. Add salt and pepper. Carefully coat each piece of chicken in the seasoning, making sure each piece is fully enrobed. Place each piece of chicken on a baking sheet or baking dish. Drizzle each piece of chicken with olive oil and bake at 350F for about 20 minutes. Serve with roasted potatoes or rice and a green vegetable as a side. Enjoy!
