Sweet & spicy wings

My husband loves chicken wings. And he also loves the classic combination of sweet and spicy flavors. He’s part Thai, so he grew up with bold dishes boasting of sweet, sour, spicy, salty all in one bite. Oftentimes I struggle to create something for him that’s even a glimpse of his childhood favorites; but, I think I may have hit close to home with my sweet and spicy chicken wings. And I have Neat Nick Preserves Hot Pepper Jellies to thank for that!

He’ll eat them for breakfast, lunch, dinner, and all snacks in between. His favorite wings by far are his dad’s Thai grilled wings, which are made with some sort of magic. We don’t know how he does it, and he might make the wings slightly differently every time, but they are packed with intense spice and flavor. Hubby loves eating his dad’s wings with a bowl of sticky rice and his dad’s famous spicy jalapeno sauce on the side.

You can see what I have to live up to here. I know I can never, and nor would I even want to, re-create my father-in-law’s signature wings, but I did set out to make some chicken wings for hubby that I thought he would thoroughly enjoy.

A simple spice rub of salt, pepper, granulated garlic, and smoked paprika. Let the wings marinate in the dry spices for a bit, bake them up, then toss them with the piece-de-résistance: Neat Nick Preserves Hot Pepper Jelly. The dry rub is just the base, but it’s really the jelly that makes these wings superb. I love watching my husband enjoy food, whether it’s from my own cooking or someone else’s; it just brings me so much joy. So, looks like I will be making these wings every time we get a new Butcher Box delivery!

Baked sweet and spicy chicken wings

3 lbs. Butcher Box chicken wings
2 tsp. salt
1-2 tsp. black pepper
2 tsp. smoked paprika
½ – ¾ cup Neat Nick Preserves Pineapple Hot Pepper Jelly or Mango Hot Pepper Jelly

In a small bowl, mix together with a fork the salt, pepper, granulated garlic, and smoked paprika. Toss this mixture onto the chicken wings and place the wings in the refrigerator to marinate for at least 2 hours, or overnight. When ready to bake, spread the wings out evenly into a large glass baking dish (or two smaller baking dishes) and bake at 350F for 30-45 minutes. Remove from the oven and melt the jam in a small saucepot on the stove or in a bowl in the microwave. Pour the hot jam over the hot wings and toss with tongs to evenly coat the wings. Serve immediately.
